Fraunhofer Future Food – Phase 2

In the second phase, the Fraunhofer EMB is further expanding the development center for food research.

About the project

The food industry is of particular importance in the northern German region, and the demands of society and customers on this industry are demanding: nutrition should be balanced and health-promoting, and the environment should be protected as much as possible. In addition, sustainable production and low food prices are desired.

The lively interest of companies from this industry in the research of the newly founded working group "Food Technology" of the Fraunhofer EMB signals the great need for new research services in Schleswig-Holstein.

Contents of the project are the expansion of the development center for food research. The focus is on the use of marine resources (such as macroalgae, mussels, fish and their by-products) for innovative food products, as well as the establishment of in-vitro and in-vivo test systems for food ingredients. In addition, close cooperation with North German food manufacturers and the organization of workshops with and for the food industry are planned.

 

The goals of the Fraunhofer EMB competence center are:

To support the food industry, especially in Schleswig-Holstein, in innovations along the value chain and to be a visible contact in the selected field of innovation.

Research marine resources and develop foods and food ingredients from them.

Generate scientific knowledge by linking the previously separate scientific fields of cell technology and food technology, and by using aquatic model organisms (zebrafish).
